Coffee of the Month Club: Komodo Dragon – November 2019

Introducing Komodo Dragon, the exclusive coffee for November to Coffee of the Month Club members.

What: Flores Organic Rainforest Alliance Bajawa Ngura Grainpro (otherwise known as Komodo Dragon)

Where: Bajawa, Ngada Regency, East Nusa Tenggara Province, Indonesia

Harvested between May and September each year at approximately 1,752 feet above sea level, the Flores Coffee (Komodo Dragon) is roasted to order at Fire Dept. Coffee’s Headquarters and Distribution Center. But before the roasting can happen, this Catimor and Timor Hybrid varietal is first “wet-hulled” and then dried in the sun, in order to give you that pure earthy and spicy flavor only the wet-hull process can give you. Paired with rich hints of dark chocolate and vanilla, this is the perfect coffee to enjoy during the first few snowfalls of the season.

Wait… what does “wet-hulled” mean?

Essentially a small farmer picks the coffee and hand churns it through a depulper to rid the cherries of its skin. The cherries are then fermented overnight to break down mucilage (inner layer of skin) and washed off. The goal with wet-hulling is to get to the essence of the coffee cherry, which is essential to the remaining taste. After this beginning process, the coffee cherries will, over a period of a few weeks, dry to around 10-12% moisture.

The Flores Coffee is certified organic and is harvested from family-owned farms located on the slopes of the Inerie volcano in the Ngada regency of Flores, one of the five islands in the Lesser Sunda archipelago of Indonesia, rich with volcanic soil and home to the Komodo Dragon. As it goes, over the last decade or so, a growing number of farmers have been pooling their resources together to make this wet-hulling process (called “Ngura” in the Bajawan language) even better. This process is similar to that of the Sumatra varietal. The attention to detail given to these cherries is impeccable and meticulous; ensuring only the greatest-tasting coffee you can get from this region.
