This Ain’t No Third Wave Coffee

Have you ever heard the expression “The Third Wave of Coffee” before?

They say it’s the latest phase in the history of high-quality coffee — the next evolution in fancy, craft java. But you know what, that’s hipster stuff. That’s not what we do at Fire Dept. Coffee.

Let us give you a quick crash-course on the three waves of coffee, and then we’ll tell you why we’re better than that, why you’re better than that, and why we are so grateful to have you on our side.


The First Wave 

This is where it began: coffee for mass consumption.

During the First Wave, coffee was designed to be easily accessible. Some people point to the early- to mid-1900s, while others will say it dates back to the 1800s. No matter the time frame, this is when it became relatively easy to find coffee in stores and restaurants, and people could also brew it in their homes.

The First Wave gave rise to coffee brands you typically see in a can in grocery stores. So, there’s that.

The Second Wave

 

The latter half of the 20th century ushered in the next wave.

Suddenly, coffee wasn’t just coffee anymore. Now, we had espressos and lattes and frappuccinos. Ordering a cup got a lot more complex. Coffee shops large and small began to dot the landscape.

You can thank the Second Wave for Seattle-based coffee.


The Third Wave

Then came the Third Wave.

It started out with a greater focus on the quality of coffee. Companies gave more attention to finding the perfect coffee bean to create the very best flavor.

Then things got weird. Those hipsters took over and turned coffee into a status symbol — something to show off to make themselves feel as though they were part of the high-class society and better than the next person.

It’s not our thing.

A Wave of Our Own
