Have you ever heard the expression before? The Third Wave of coffee.
They say it’s the latest phase in the history of coffee. The next evolution in fancy craft java? But you know what, that’s hipster stuff. That’s not us.
Let us give you a quick crash course on the supposed three waves of coffee. Then we’ll tell you why we’re better than that — why you’re better than that. And why we are so grateful to have you on our side.
The First Wave
This is where it began. Coffee for mass consumption.
During the First Wave, coffee began to be easily accessible. Some people point to the early to mid-1900s. Others will say it dates to the 1800s. But this is when it became relatively easy to find coffee in stores and restaurants. People could brew it in their homes.
The First Wave gave rise to coffee brands you typically see in a can in grocery stores. So there’s that.
The Second Wave
The latter half of the 20th century ushered in the next wave.
Suddenly, coffee wasn’t just coffee anymore. Now we had espressos and lattes and frappuccinos. Ordering a cup got a lot more complex. Coffee shops large and small began to dot the landscape.

The Third Wave
Then came the Third Wave.
It started out well. A greater focus on the quality of coffee. More attention paid to finding just the coffee bean to create the very best flavor.
Then things got weird. Those hipsters took over and turned coffee into a status symbol, something to show off to make themselves feel high class and better than the next person.
It’s not our thing.

First and foremost, we’re here to bring people together.
We roast easy-drinking coffee for hardworking people. We do it to celebrate each and every one of you — not just firefighters but men and women everywhere who work long hours to get the job done.
We do it to help you stay alert and ready and to make your days a little better.
It’s important to us to help take care of those people when they need it most. That’s why we’ve donated portions of our proceeds to charities whose work we admire.
And it’s why we’re preparing to launch the Fire Dept. Coffee Foundation to help support first responders who are recovering from serious injuries.
